The modern ramen is the perfect ramen (if you prefer spicy do not get this one). Skip the pork buns. They are not even close to the hype

Avoid the wait: put your name on the list, then go kill some time at the pool hall around the corner. They'll call you when your table is ready.

There will *always* be a 90-minute wait, but don't despair! There's a chill pool hall a block north on 4th Ave, so arrive early and shoot a few games while you wait.

Try the goodbye rice (ocha zuke) for a little something extra, after a bowl of ramen soup. That's 3 logs of rice, dotted by sesame seeds and nori. Quite nice.

Ramen is good. Broth is flavorful and porky without being too salty, noodles are tender and chewy, pork is not too fatty or salty and full of flavor.

Don't bring anyone who's ever been to Japan here; they'll complain that the ramen is twice as expensive as Tokyo and half as good. The three hour wait time means the proprietors have tricked NYC.
