Ernest Hemingway mentions the cochinillo asado (roast suckling pig) at Botin in the 'Sun Also Rises' and yes it is incredible... (If it's good enough for Ernest Hemingway, it's good enough for me!)
The Cochinillo is the best you will get in Madrid, almost as good as in Segovia. Beside the place is the oldest restaurant in the world, totally worth it.
Despite reservation times on website, if you call, you can often get a better time. Also reservations available last minute, and you can occasionally do a walk-in without one.
Waiters were first class. After RM beat Altleti at Bernabeau, waiters overheard put discussion and several dropped by to discuss footy. Fantastic good fun. Offered free shots at the end.

World's oldest restaurant according to Guinness! Go here for lunch to say you've been but scope out more refined, less touristy places for dinner. Food still good and old timey atmosphere.
Probably the best lamb I have ever eaten. Soft, melts in your mouth, tasty. Lack of seasoning is so you enjoy the flavor of the meat and not be overwhelmed by other things. Super traditional recipe.
The world's oldest restaurant has outlasted all other for a reason. The suckling pig and the lamb are amazing. Check out the wine cellar in the basement.
We had just one thing in mind: the roast suckling pig. It’s not at all cheap, but as someone said before it’s well worth the expense. Service was very good, which is hard to see sometimes in Spain.
Really good food :) expensive of course, and some of the menu translations are confusing, but great for such a touristy place. Try the squid in its own ink and the escalope. Sangria is probs don Simon
Only avail res was 11:15p, we were the last ones there but the servers were great, some rando live quartet came through to sing for tips, theres an old wine cellar u can check out. Sirloin is huge
Wonderful and amazing - the oldest restaurant of the world, must visit! very simple design and great dishes! Try the red wine Marques, sole fish, fish soup was fantastic!
Thanks to the tip on foursquare, we made a reservation after 10 and got to be lucky enough to enjoy not only good food but also even better music. It makes just fantastic atmosphere!
This restaurant is very quiet and cozy. The roast suckling pig is fantastic and well worth the expense. Everything was great except that the band came around to the tables asking for money.
suckling pig is the best, juiciest piece of pork i've ever had! pass on the white asparagus and shrimp is too salty. but come for the pork it's worth it. sangria is nice too

This restaurant has a long history, good service, albeit rushed, excellent ambiance, a very good wine cellar but the food, especially the famous suckling pig is a bit overrated.
Supposedly the oldest restaurant 'in the world' do NOT miss making a reservation here if you're in the city. Come after 10 & you'll even get a performance from musicians who come to visit
