This is a celebration of our fifteenth year making craft beer and it stands as an example of the bold flavorful beers that we have come to make. This is not a timid ale; it’s an intense, full-bodied smoke experience
Thirteen
This smooth sipper is made with 5 malts and a touch of oats. you’ll find big chocolate and roasted notes, balanced with the Belgian flavors from the abbey yeast strain
Eleven
Phoenix is another one of those hops with low cohumulone levels, which means when used in very large quantities (as we do in eleven) the hops flavor is very smooth, not a hint of harshness for the enormous amounts of hops in the brew

Fourteen
To honor 14 years of making craft beer we decided to brew a wheat wine. This unfiltered brew is made with over 50% wheat to give it a distinctly spicy character. Enjoy it now, or if you have the patience, give it some time in your cellar. When you are ready, expect to find notes of tart wheat, grapes, and honey with crisp bitterness and carbonation
Twelve
Made from 50% rye malt and 50% barley malt, this strong ale is extremely viscous. The rye adds a tantalizing note of flavor on the palate with a hint of tartness you’ve come to expect from rye
Decadence
Decadence weighs in at 13% ABV and is a fantastic sipper, especially after dinner or consider paring it with a good book on a cool fall evening

Bottle Conditioned Blasphemy
2011 bore witness that beer miracles actually can happen: blasphemy has returned this ‘refreshed’ version is actually fully bottle conditioned and available only in a 750 ml cork and cage package
Imperial Pumpkin Ale
Like a pyramid for a pharaoh, we set out to make a bold monument for the king of the pumpkins this 8.0% ABV pumpkin ale is the mother of all pumpkin ales. It is heartier, spicier, and more “caramelly” and “pumpkiny” than its faint brethren

Quad
Big and delicious, quad is an elegant dark ale. Rich with complexity and flavor, try savoring it with a fine dinner. You also might enjoy it as an aperitif or as an accompaniment to a dessert, but quad stands alone quite well. We recommend enjoying quad in a brandy snifter or wineglass so you can drink in the aroma of this fine ale

This is an incredibly intriguing ale is made by aging our old heathen imperial stout in oak barrels that were used for making fine kentucky bourbon

Blithering Idiot
Our barleywine is made in the British tradition of balanced hearty ales. blithering idiot is a deep-copper ale with intense malty notes of dates and figs on the palate that follows a pleasurably malty aroma to your taste buds
Tiny
Tiny is a Belgian inspired imperial stout weighing in at 11.8%. you’ll find big chocolate and roasted notes, balanced with the Belgian flavors from the abbey yeast strain
Merry Monks
When you try this beer you’re in for a unique treat. the special effervescence and creaminess are immediately apparent when pouring. the pilsner malts combined with the Belgian yeast strains yield a remarkable and complex flavor- perhaps you’ll note subtle hints of banana and cookie dough
Double Simcoe IPA
Double simcoe IPA, 9.0% ABV, is our incredible reward for hopheads seeking the intense hop flavor in a double IPA, without the harshness. It is brewed utilizing only the simcoe hop variety
Old Heathen

Verboten is a Belgian-style pale ale with an American twist. originally released as “alpha”, our first brewers’ select beer and then later seasonally released as as well, lets just say the name was ‘forbidden’. as a result, this beer is now called “verboten” (German for forbidden)
Big Ern's IPA
Weyerbacher brews the house IPA, “big ern’s IPA”, for the pizzeria uno chain of restaurants in the philadelphia area. Big ern’s IPA is a 6% west coast-style india pale ale with a very smooth, citrusy finish hopped with cascade, centennial, columbus, and simcoe

Oscar
Oscar is a 7% hefeweizen/ipa hybrid or a “hoppy hefe”. it’s cloudy and yellow in appearance, much like a typical German-style hefeweizen and it has an ipa-like hop profile. oscar is a medium-bodied ale with a spicy clove character that blends well with the spicy side of the hallertuaer and saaz hop varieties. awesome
Mike
The following is an excerpt from the November 2010 newsletter written by head brewer chris wilson it’s october, finally, it’s time to have my first pumpkin ale ha ha ha i kid, i kid as i mentioned last month, it’s time for “mike”. the newest addition to the brewer’s select series, mike will be a Belgian style dubbel. i just had a sample off the tank and it is going to be awesome. it has a rich malty character and a somewhat surprising dryness. it is still fermenting, so we still have a little while to wait until we know what it will be like. it looks like it will be around 7.7% abv and it will be bottle-conditioned. delicious
Kilo
Kilo is a summery saison made with chamomile, coriander, and grains of paradise. The spices, hops, and yeast have formed a complex spicy pallet enhanced with a tart undertone. The sweet, floral aroma is filled with orange, juicy fruit, and pepper let loose by lively carbonation. 5.9%, unfiltered, and bottle-conditioned, kilo is the perfect beer to break the summer heat

Victor
Victor has a strong malty backbone with a roasty base and features warrior, northern brewer, and centennial hops. Victor is dry hopped with more centenial and weighs-in at 42 ibus. Victor is 5.8% ABV

Excerpt from the July 29, 2011 newsletter head brewer chris wilson: august is also going to bring our next brewer’s select beer, romeo. we’re going to go Belgian with this one. it has not been bottled at the time i’m writing this, but i can tell that it will be an 8.5% Belgian red ale. we are looking at around 35 ibus and a nice dose of hallertuaer and saaz in the finish
Papa
Excerpt from the April 14th, 2011 newsletter head brewer chris wilson april will also bring with it “papa”, which will be the next brewer’s select beer. it’ll be a scotch ale. it will be a little different than our “scotch ale” of the past. this one will be intensely malty and complex. it will be a malt lover’s dream and the antithesis of blanche. we have not forgotten you malt-heads it should be a good pairing with a roast or a burger

Lima, mike, November, Oscar, papa our most recent release in the brewer’s select series is November. dan hitchcock, lead brewer, and i thought that we might play around with coffee with this one. dan had the great idea to utilize a brown ale rather than a porter or stout. both of which are more commonly used for coffee infused beers. i think i’ll call it an imperial breakfast brown ale; that is, a brown ale made with oats and coffee
Lima
Lima, an American-style india black ale, the newest addition to our brewer’s select series, will be available in bottles only at the visitor center. lima can be likened to a traditional ipa brewed with dark malts added to give it a brown color and a roasty character. it hovers around 6.3% abv and will tip the ibu scale at around 70. hopheads will love this beer

The characteristics of a “big” porter with its strong chocolaty malt backbone and light hop finish topped off with a touch of molasses
House Ale
Brewed with pale, caramunich, and carapils malt for flavor and body, then hopped exclusively with expensive tettnang hops, a very delicate, delicious hops that perfectly fits this beer with just the right snap of flavor
Prophecy
Prophecy is our third ale to be aged in bourbon barrels. We’ve taken our merry monks’ ale and carefully aged it in bourbon barrels
