Koshu grape is primarily grown in the Yamanashi Prefecture, which is particularly suited for the seasonal climatic extremes of heat and cold. Koshu wines now form a great fine wine segment of some of the best restaurant in Japan.

Akashi Tai Daiginjo (served chilled)
Akashi Tai Daiginjo is made with even more stringency to the Honjozo. It has a milling rate of 40%, and a brew master had to watch over the fermentation process for 72 hours without sleeping!! You will be reminded of the honjozo but with more prominent flavour, spice, and excitement. It is elegant and delicate and therefore best served chilled to savour all the flavours.
Akashi Tai Honjozo (served chilled or hot)
Akashi-tai Honjozo begins with Yamada Nishiki rice grown in Hyogo Prefecture. This sake is lovingly handcrafted in every step of the process with 60% milling rate. It has an old fashioned satisfying full-body taste and extremely well rounded. This sake would glide down your tongue like silk. It is fun to try this sake at various temperatures!
Akinota Junmai Ginjo (served chilled)
A characteristic, stylish but yet friendly sake from the Akita region. It's brewed in a much colder climate to the Akashi Tai, but with equal attention to details. As the results, it delivers a cleaner, and more mineral flavour.It's great with flat fish

This wine has an attractive garnet colour. On the nose there are notes of spice and candied fruit with nuances of fresh red berries such as strawberries and cherries. It's a rare sweet wine from Canada. The grapes freeze and thaw 8 to 10 times and them picked in the middle of deep winter night when they are frozen. Once picked the grapes are pressed whilst frozen to yield one drop of grape juice per grape. This process results in a wine that's so finely balanced between intense sweetness and acidity. Indulge on it own or try it with smoked salmon. It's a brave new world
