You​ gotta be in good shape to make this sandwich. first we take a fresh chicken breast and pound it to perfection for at least 10 seconds, then we roll it in fresh Italian bread crumbs and throw it into a frying pan with light Italian olive oil until it says uncle. the sauce is homemade with fresh tomatoes. We then bake the heck out of it in the oven with our two favorite kinds of cheeses mozzarella and parmesan and out comes a chicken cutlet to die for.

A northwest favorite. no kidding! you've never tasted eggplant like this before. even the kids love it. prepared the same way as our chicken cutlet, but without the pounding, rolling and throwing. come celebrate national eggplant week with us 52 weeks a year. get outta' here!.
