Sake List
Sake
Synonymous with japanese culture, sake is a perfect accompaniment with many dishes here at chino latino, or indeed to drink on its own. The origins of sake are unclear; however, the earliest written reference to use of alcohol in japan is recorded in the book of wei, of the records of three kingdoms.
Often described as a “rice wine”, sake is indeed made from rice as well as water and koji (yeast), but is brewed in a way similar to beer. The colour and appearance of sake is similar to that of a light white wine, and its taste resembles, to some extent, that of some varieties of sherry.
Here at chino latino we have three distinct styles of sake, and so to aid you in your sake journey which have provided some descriptions below. As they say in japan “kampai!”
Honjozo
Made with added brewing alcohol, these sake’s are known for a mild and unobtrusive bouquet and crisp flavours.
Uragasanryu Kokahonjozo 125Ml
A very elegant honjozo with pear on the nose that reappears on the palate. Our most versatile sake. Smooth and easy to drink, this is a real stunner that goes great with sushi, sashimi, tempura and grilled fish.
Choryo Sawasawa Sparkling Junmai Nigori 125Ml
A deliciously lively and sparkling, cloudy sake which undergoes a secondary fermentation in the bottle like a champagne. Works well with full and light flavoured dishes such as dim sum.
Junmai
Meaning “pure rice”, junmai is made exclusively of rice, water and koji. Junmai sake’s are renowned for a full and solid flavour profile that is clean and well structured.
Ginjo
Brewed using traditional tools and methods, ginjo sake is considered the highest achievement of a brewers’art. Sake’s of this grade use highly polished rice grains and are fermented at colder temperatures for longer periods of time, resulting in refined, light, aromatic and fruity sakes.
Yamato Shizuku Junmai Yamahai 125Ml
With marzipan, nuts and koji on the nose and a savoury yet fruity creaminess on the palate, this sake is full of character.
