The Erie Canal was built by thousands of hardened workers who toiled away against the earth. with this beer, we salute the excavators who built the waterway to the city of buffalo, one shovel at a time. excavator incorporates seven different malts to achieve a rich, yet smooth flavor and balance. it is highlighted by judicious amounts of chocolate malt, with a subtle, spicy finish from the use of flaked rye. malt: english pale malt, victory, caramel, munich, chocolate, flaked rye and special b hops: nugget, willamette abv: 5.8% ibu
Hayburner American IPA

Mules, known long ago as “hayburners”, were the workhorses behind the construction of the erie canal. this ipa is equally dependable, and is extremely satisfying at the end of a hard day’s work. hayburner is a luscious and citrusy ipa, with primary notes of orange, melon, grapefruit, and a slightly earthy finish. it packs a firm bitterness but remains balanced by abundant late hop additions and a soft, airy malt base. malt: 2-row, crystal, carapils hops: warrior, ctz, cascade, glacier, falconer’s flight abv: 7.0% ibu
Seasonal Beers
Cinnamon Apple Ale
25
We use locally pressed cider from New York state grown apples as well as locally grown 2-row barley and locally grown hops to create our fall seasonal. savor this beer and celebrate autumn in new york. this beer pours a perfect reddish/amber color and is slightly hazy. the aroma immediately reminds you of fall from the fresh cinnamon and allspice used. upon the sip, you get more spice, but also a fantastically rich malty base, slightly sweet, with a subtle tangy apple finish. the hops add just enough bitterness to keep this spiced fruit beer very much a beer. this is a perfect beer to bring in the fall season - it’s almost like drinking a candied apple. malt: 2-row, munich, caramel, flaked oats hops: centennial liberty fruits and spices: new york state apples, cinnamon, allspice abv: 6.8% ibu
Vanilla Oatmeal Stout
29
Our winter seasonal is considerably roasty, reminiscent of coffee, from the roasted barley used, and is full bodied from the gobs of oatmeal added to the mash. Right before we package the beer, we add a precise amount of extracted vanilla, which we make at the brewery ourselves using only the finest Grade A Mexican vanilla beans. The result is a delicious and hearty brew that will warm you up on many a snowy evening. malt: 2-row, flaked oats, crystal, chocolate malt, roasted barley hops: galena abv: 6.8% ibu
