Kevin P.: Axian: 自1983年成立以来,都非常守旧地制作传统客家梅县风味的酿豆腐,馅实料足,从不欺场。听说客家人早年在家里自制的酿豆腐内馅,都会添加咸鱼、左口鱼粉或虾米来添香调味。 而华娇酿豆腐20多年来都坚守古方做法,在肉馅中加入煎过的梅香咸鱼和碾碎的左口鱼粉,就像用做给家人吃的方式,让顾客品味到客家人最家常的老滋味!不过如今大部份的酿豆腐店家,早已经舍弃了咸鱼,即使添加咸鱼,也只限于酿白豆腐而已。

Kevin P.: Axian: 其中一家乌鲁音卤面的老字号便是福春记。在这家自1940年代就开始营业的老店里,同样有着黑与白两道面食,但却和根记的黑白双宝不同。其实这两种卤面都源自于中国闽南地区,北马卤面属于漳州做法。中南马卤面则与泉州煮法类似。至于乌鲁音卤面的煮法,其实跟中南马卤面一样,是将面条和汤汁一同煮,最后才勾芡,只是比较不同的是乌鲁音卤面还添加黑酱油和浙醋。
