When we make a sorbet, we want the final product to taste like the fruit that's in it. Take a bite of cantaloupe. Really good w/ a slice of prosciutto, by the way.

Crema-Cream
Although we make every recipe from scratch, there are two common "bases" in the gelato world. There's the white base, our fior di latte, & there's a yellow base, crema. Crema has eggs & the fior di latte doesn't. Taste the difference.
Fior Di Latte-Flower of Milk
It's our namesake so we take it seriously. What is fior di latte? Translated literally it's "flower of milk", but we like to call it "the best that milk has to offer". In italy, fior di latte is the test flavor that let's you know if the gelateria is a good one. You can taste the quality of the ingredients w/ no frills.

Panna Cotta-Panna Cotta
This one surprised us. It didn't sound like a good idea. Then we made it. And we each ate a quart in 20 minutes. It tastes better than panna cotta, oddly enough.
