Raw Bar
Cocktails
Creole shrubb liqueur & French made canton ginger liqueur are mixed w/ a tangy orange preserve. just the right amount of bitter & sweet to mark the transition of the seasons.
Weeping Sakura
A variant of the manhattan using a complex yamazaki 12-year-old japanese whisky from the suntory distillery, stirred w/ wild cherry rose syrup, sweet vermouth & elixier liqueur. Strong, floral & beautiful like the sakura tree.
Eclectic Orchard
Rhubarb & strawberry take center stage w/ the elegant clean taste of el dorado 3-yr-old rum, then subtle tones of hibiscus flowers & peppery spice are added, rounded off w/ a pleasing mint foam. Exotic yet understated.
Deciduous
Take taylor fladgate 10-year-old port & mix w/ a blueberry shrub, kick in some spice w/ a little shiraz & some Vietnamese cinnamon. add influences such as cardamom & lemon & it’s a sure fire way to forget about the harsh calgary winter
Apple Cart Daisy
Using spice tree whisky (jokingly referred to as illegal whisky because of its second maturation in new french oak barrels) is mixed w/ a potent apple & fig pie filling & lengthened out by our unique pink peppercorn caramel. It really doesn’t get much better
Derelict
This award winning cocktail is a staple of the raw bar drinking culture & rightly so. A base of skyy vodka, & homemade plum & clove jelly is brought to life by the inclusion of lychee liqueur. Simply put: delicious
Punch Serene
A highly satisfying milk-style punch, grand marnier is intensified w/ the addition of vanilla & lavender, orange blossom water & the essence of mole-style chocolate. Perfect anytime but even better w/ dessert
Autumn Song
A crisp juniper berry & earl Grey tea that’s mixed w/ martin millers gin, a touch of aperol Italian aperitif & elements of dandelion & burdock, balanced out w/ a little citrus & soda that conjures up images of autumn at its peak.
Ornamental Pecan
Fraser river raspberry vodka shaken up w/ pecan syrup & blackberry preserve & yellow chartreuse – a liquid remedy that will raise spirits battered by the cold.
Searching North
Mount gay rum, w/ added peach & apricot & the almost sweet spice of turkish urfa biber & hints of lemon grass. A bewildering concoction & a truly satisfying taste experience

Sho Chiku Bai Ginjo Sake, Jpn, (300 Ml)
21.00
Sho chiku bai means "pine bamboo plum". Ginjo is a special reserve connoisseur class of sake. Most sakes are brewed w/ rice that has been milled 30%. This ginjo they use rice that is polished over 50%. Additionally, they use a special strain of yeast that allows for fermentation at a cooler temperature. The result of the slower, longer process is a silky-smooth, rich & fruity flavor.
Indigo Wind, Sparkling Sake Junmai, Jpn, (200Ml)
18.00
This sparkling saké is rather uncommon. It made in the same fashion as a regular saké except that fermentation is stopped when a certain degree of alcohol is reached, in this case, 6% (rather than the usual 18% to 20%) . It then is bottled, but there are still remains of much of the natural sugars in the saké, the second fermentation starts in the bottle, which gives it it's bubbles. This sparkling saké is a refreshing drink that pairs well w/ dishes w/ a bit of spice!
