Pandan is a green asian leaf used in asian cooking.

Our take on the classic dome shaped dessert, this cake contains the perfect pairing of raspberry sorbet and chocolate fondant gelato, on a bed of flourless chocolate sponge, finished with Italian meringue.

Filled​ with hazelnut and gianduia gelato, this cake is encased in a hazelnut dacquoise and vanilla mousse, then covered in a gianduia ganache to finish.

Contains a wild strawberry sorbet center with vanilla semi-fried do and strawberry gelato, all on a base of marsala soaked sponge. Finished with piped meringue and raspberries. Serves 10

A traditional northern Italian favourite, tiramisu gelato combines fresh eggs, mascarpone and marsala. in our interpretation, a white chocolate and coffee ‘bowl’ is filled with layers of tiramisu gelato and lady finger biscuits. this is finished with Italian coffee meringue dusted with cocoa. finally, top and center is a ball made from white chocolate, rolled in coffee bean and dark chocolate which is filled with a coffee and marsala gel. serves 14
