Kazy • April 30, 2018醤油ラーメン 680円。細ストレート麺。パッツンとした歯応えの低加水麺。チャーシュー各1枚(しっかりローストされたバラ肉、パストラミ風の肩ロース)、メンマ、ネギ、かいわれ。スープは掃湯方式という中華の技法で、丸二日かけて仕込まれる。真っ黒なビジュアルで一見すると味が濃そうだが、キレのある仕上がりの中に甘味を感じられる旨いスープ。表面には背脂魚介油で、コッテリ感も追加。文句なく美味しい一杯。
